Chef Antonella De Vitis
I aim to transform the Salento tradition in an inclusive way with elegance and refinement, highlighting the biodiversity of the area.
Passion
When I think back a few years ago, never would I have imagined becoming the chef of a kitchen; one of my own then!
I found myself doing this job by accident; I chose it out of passion.

Ancient Monastery
We have fond memories of that evening-there were friends, relatives, acquaintances, and the curious.
Me in the kitchen along with Grandma Linda preparing orecchiette, meatballs, tria and chickpeas, and Massimo in the dining room making sure our first guests didn’t miss a thing.
You didn’t know what you were getting into, there was only a kitchen and a dream, around us the desert.
Then from day one you came to us, you chose us, we welcomed you, and you rewarded us.
You returned making us the creators and participants of your carefree moments.
The time since then has flown and you know, it will fly again, but the dream — that remains.
The Dedication
The minutes leading up to table service is the moment I love the most, because adrenaline surges, breath becomes short, muscles contract. You feel alive more than ever
